

"Khao
Chae" is a unique ancient Thai
dish.
It is popularly eaten during
the summer because it provides a cool,
refreshing feeling and a delicate aroma
from the flower-infused water. The
origin of Khao Chae comes from the Mon
culture, where it is called "Peung
Da Chok." Later, when the Mon
people settled in
Thailand,
especially during the
Ayutthaya period, this dish became
widespread in Thai society.
During
the reign of King Phutthaloetla Naphalai
(Rama II of the Rattanakosin
period),
Khao Chae was refined into a
beautiful, court-style dish. It was
meticulously presented,
including the
smoking of candles in the flower-infused
water and the intricate carving of the
side dishes,
becoming "Royal
Court Khao Chae." The distinctive
feature of Khao Chae is that it uses
cooked jasmine rice,
which is then
rinsed to remove the starch and soaked
in clean water infused with candle smoke
and flowers,
such as jasmine. It is
served with sweet, salty, and savory
side dishes to contrast with the
coolness of the rice.
